This week is going well. We are embracing what people from the 1940s knew already- meat with vegetables in varying varieties makes for a really good meal! Monday night we ate with my family- roast chicken with a veg in batter (not sure what the batter was but they are on low carb as well so it would have been something exciting). Tuesday night we had gammon steaks with egg, pepper and chopped nuts. Last night it was slow cooked lamb in a beautiful spiced sauce. Tonight it is something like maafe. African chicken stew with a peanut sauce. I have added spinach to mine and once it’s cooked, it will be a one pot wonder. Then there’s lunch times. These are currently simplified to salad or soup. Both are going well. Here is one salad we have had recently including nuts, soft boiled eggs, grated carrot, mint and my favourite mango dressing.
